As a public service announcement, I wanted to pass along a super easy recipe for chicken tortilla soup that I tried yesterday. It's yummy!
The basic framework for the soup was on Pinterest and then
I tweaked it a little. You need:
6 c. chicken broth
1 jar salsa verde (any kind you like)
Can of Rotel tomatoes and green chiles (I used mild)
1 can corn drained
1 can beans drained and rinsed (I found a combo can of black, kidney, and pinto)
Rotisserie chicken, shredded
That's it! Put it all together, heat to
boiling, simmer about 15 minutes to let flavors blend.
Of course, you can dress up your bowl of soup with shredded cheese, tortilla strips, chopped avocado, fresh lime wedges, or a dollop of sour cream. I made corn muffins as well, and it was a very satisfying dinner. I even took leftovers in to work for my lunch!
